Into the Wild?

Hey Guys!

Hope you’re having an awesome Saturday.  Mine has been, in a word, productive.  My stupid internal clock woke me up at 6:30 this morning!  I resisted until 7 when it looked like I wasn’t going to be getting anymore sleep.  The boy and I had gone to bed at 9 last night because apparently we’re senior citizens.

Anyway, I got up,  stumbled downstairs for breakfast and took a good look at this:

I absolutely HATE having a dirty kitchen.  I can stand the rest of the house being a little untidy, but as soon as my kitchen gets the teensiest bit messy, I NEED to drop everything and scrub.  So, I had a quick breakfast of toast with pb & jam to fortify myself and then got to work. Of course, because as soon as you start cleaning, you just can’t stop right? No? Well I can’t,  and I wound up cleaning the entire house this morning and I was finished before 9:30 rolled around!

Of course by that time I was hungry for breakfast number 2 so I made myself a beautiful GM with the remainder of my spinach.

In the mix:

1 frozen nanner

1-2 handfulls of spinach

1 c. vanilla soy milk

1 tbsp chia seeds

2 tbsp unsweetened coconut

The coconut was added on a whim and actually gave it a nice tropical flavour! Seriously- add in a bit of pineapple to go with it and you’ll think you’re chillin on the beach in paradise 🙂

While I was enjoying my smoothie I figured I should get lunch underway.  If you’re wondering where the boy is, he went for a run while I was cleaning, funny how that happens….  Then, he decided to go to the driving range, go figure.

For lunch I decided to empty the contents of my fridge into a bowl, add some lentils to it and call it a day.

I’m calling this:  Kitchen Contents Lentil Salad

1 can lentils, rinsed and drained

1 tomato chopped

1 yellow zucchini diced

½  c. cucumber diced

¼ c. caramelized onions

Apple Dijon Dressing

1 tbsp Dijon

2 tbsp Apple Cider Vinegar

¼ c. olive oil

½ tsp maple syrup

I combined these guys into a bowl and let them mix n mingle then enjoyed it after I got back from my errands!

The reason for the mid-day post is the boy and I are headed off to a pig roast.  Yes you heard me correctly.  Apparently it’s a huge tradition with his friends where they spear a pig and let it bbq all day until about 4 pm.  All the while people sit around all dignified consuming copious amounts of beer.  It’s kind of like Animal House meets Lord of the Flies.  Very interesting.  As you can imagine, I am packing some snacks to keep myself satisfied while they feast on pig:

Cheese! I have some Oka and Brie..

You may have noticed that I don’t eat dairy very often, my stomach doesn’t always agree with it, but I love cheese too much to give it up entirely so I stick to have small quantities of good quality cheese every so often as a sort of “treat”.

I also packed:

2 bananas

Sunflower seeds

There will of course be foods other than pig available but I’m hoping this will help keep me going!

Don’t get me wrong, I’m a huge lover of beer but these just seemed way more summery! Hehe

Well that’s it for now! The boy has already left and my friend Amy is on her way to pick me up.  Can’t wait to tell you guys all about this experience tomorrow!

    I have never gone to a pig roast before – granted, I wouldn’t be indulging in it, but it would be interesting to see!
