UGH!!!

Yes, today has been one of those days.  It was a toss-up between whether I was going to snap everyone’s head off or just burst into tears at the drop of a hat- fun huh?

If you were to ask me the reasons why, they would be extremely varied and non-sensical, and no it’s not that time of the month. I’m just a crazy female, good times!

Normally, I would just unload this onto the poor boy but as he is on vacation this week at the cottage, I get to pour it all out on the internet- interesting my logic, no?

To make matters even worse, I decided to go to Bikram tonight, and it was just an epic FAIL- I had to sit out on a lot of poses and was very dizzy for most of the class. My breathing was off and I just couldn’t focus- it was a very emotional and frustrating class to say the least.

However, I don’t feel you all deserve to hear only my whining and since you’ve stuck with me this far, I’ll share a fun recipe with you all.

Presenting the Dilly Potato Salad! (Prepared yesterday)

Inspired by Gena brought to you by the Veggie, this dish was truly delicious.

I started off with roasting 6 medium red potatoes.

Preheat oven to 400 F

Quarter the potatoes and toss with 1 tbsp Olive oil, ¼ tsp sea salt, ¼ tsp garlic powder and a dash of black pepper.

Pour into a baking dish and roast for about 30-40 minutes, stirring every 10 minutes or so to prevent sticking and burning.  Once they’re golden and slightly crispy, remove from oven, pour into a bowl and let them cool off in the fridge.

Meanwhile I prepared Gena’s Creamy Cashew Dill Dressing.

Then because I’m slightly obsessed with all things dill I added in 2 chopped dill pickles and tossed them in with the potatoes.

Top with dressing and I served over mixed greens, and added a chopped tomato and yet another pickle because apparently I like for my sodium levels to sky-rocket.

To be honest, this salad was freakin amazing!

And, due to the fact that I’m completely unable to cook for one, and too used to the boy being around, this potato salad was good for lunch today and dinner again after my yoga class- thankfully it’s all gone and I can have something original tomorrow 🙂

Well, that’s really all I have to report today- my life sucks today but the potato salad is pretty good.

What do you do to cheer yourself up after a crappy day?  Clearly I am in need of suggestions.

    OMG That looks absolutely delicious – I’m pretty sure I’m making that potato salad for my best friend when she comes over on Wednesday! Did you eat it hot or cold?
