Oh Hummus how, I love thee- let me count the ways.
You are creamy, and garlicky with the hint of Tahiny!
You are healthy (which makes me happy)
And your texture- there is no better!
Ok, poet, I am not, but hummus lover, I am. I would almost consider it as its own food group on my personal food pyramid! I think one of my personal challenges this month will be to make my very own hummus including the soaking and cooking of the chickpeas 🙂
As I’m sure you can tell, the main focus on today’s lunch menu was, you guessed it- Hummus!
I had a hummus and jalapeno havarti sandwich on wholegrain bread served up with some veggies with hummus to dip. I also added in the rest of the olives from the weekend.
Oh, and there may be some Easter candy slipped in there too hehe
On a side note- I apologize for the blurry pictures! Another of my personal challenges will be dragging up the funds for a nice DSLR, I currently use a fairly ancient Sony Cybershot which has seen better days 😉
Alright, back to work- I’ve got a “to-do” list that rivals the Great Wall of China and I plan on heading to the gym after work. Today’s workout will be 30 minutes of cardio and upper body weight training.
